We are always looking for new recipes that will allow us to easily throw together a healthy dinner. One of moments that brings us so much joy is when we can fully utilize our pantry, and create a recipe that is nutritious and delicious. After a long day of work, we whipped up this quick recipe of Artichoke & Olive Pasta.
16ozorganic fusilli pasta (Bionaturae Organic Durum Semolina Fusilli )
2tbspextra virgin olive oil
3garlic cloves
1/2cupsweet or yellow onion, chopped
3/4cuppitted Kalamata olives, halves
1cupmarinated jarred artichoke hearts, cut into quarters
1/3cupdry white wine
Salt and ground pepper to taste
Instructions
Using a large pot, bring water to a boil and cook the pasta until al dente.
While the pasta is cooking, add the olive oil, garlic and onion to a large pan and cook on medium high heat until onions begin to soften. Add the olives and artichokes, and 3 tbsp of the oil/marinade from the jarred artichokes, to the pan and cook for 3 minutes. Pour the wine into the pan and continue to cook for about 2-3 minutes, or until the liquid almost completely reduces.
Once the pasta is done, drain it and combine with the artichoke and olive mixture from the pan. Toss until fully combined and serve.
