Soda Bread+ Recipe

Even before our recent trip to Ireland, I have had a love of soda bread. Such a simple recipe, but a staple in my “comfort food” recipe box. This past weekend, my daughter and I made a loaf of soda bread and cottage pie for dinner.

Here is my favorite Irish recipe for soda bread, and some of our variations.

Ingredients:

  • 450g/1lb all-purpose white flour, plus extra for dusting the outside
  • 1 tsp salt
  • 1 tsp baking soda
  • 400ml/14 fl.oz. buttermilk
  • Optional ingredients: Raisins, currants, or olives, etc.

Steps:

  1. Prepare a baking sheet with a dusting of flour. Preheat the oven to 450°F.
  2. Combine the dry ingredients in a large mixing bowl. Create a well in the center, and add the buttermilk gradually by folding the dry ingredients in from the side of the bowl. Mix until moist dough forms, and don’t not overwork the dough.
  3. Add in any optional ingredients and disperse through dough.
  4. Move dough to a floured work surface, and shape into a 2 inch high round. Place the round on the prepared baking sheet, and cut a deep X across the top using a floured knife.
  5. Bake in the preheated oven for 35-40 minutes. Loaf is done when you hear a hollow sound when tapping on the base. Transfer to a wire rack and allow to cool.

Note: when adding any additional ingredients, I have found that the full 40 minutes are needed.

This weekend, we decided to add chopped green olives to our loaf and it was delicious. If adding any ingredient with added moisture, remember to dry the ingredient thoroughly before adding to the mixture.
