Easy like Sunday morning. Sunday breakfasts are one of my favorite times of the week. Hot coffee, yummy food, and a little bit of peace before the week begins. Breakfast, in general, is my favorite meal of the day. I prefer to start my day with a protein packed meal to keep me full and my blood sugar stable throughout the morning. In a quest to find the perfect vegan breakfast sandwich, I created a recipe this past weekend that was an amazing combination.
Just 4 components made my morning. Vegan roll, tofu scramble, non-dairy cheddar slice and a Gardein Breakfast Sausage.
Gardein Breakfast Saus’age Patties
All I can say is that these breakfast patties are delicious! I’ve tried a lot of meatless breakfast sausages, and these may be my new favorite. The Gardein saus’age patties have a great flavor and texture, 6 grams of protein and only 70 calories per patty. (As a side note, these do contain wheat and soy, so they may not be an option for everyone.) I prefer to cook these patties in a pan with a small amount of oil or spray, but they cook up easily in the microwave as well.
Tofu “Egg” Scramble
As simple as an actual egg scramble, the tofu scramble takes only minutes to prepare and you won’t even miss actual scrambled eggs. I use Trader’s Joe’s sprouted, extra firm tofu and mash up 8oz in bowl with a fork. Once mashed to the right size, adding the remaining ingredients of turmeric, nutritional yeast, basil, salt and pepper will provide the characteristic color and flavor.
What I love about this recipe is that you can modify it in so many ways with what you have available. For example, once you have the base of mashed tofu, turmeric, salt and pepper, you can add cooked onions and mushrooms, various spices, fresh spinach and tomatoes, or black beans. The combinations are endless, and this tofu base will provide countless options for breakfast recipes, burritos, or a snack with cut veggies.
One question I get a lot is a recommendation for my favorite non-dairy cheese. While I really enjoy brands like Daiya, Miyokos, and Follow Your Heart vegan cheeses, I have been really pleasantly surprised by Whole Foods 365 plant-based cheddar slices! These cheez slices have a great taste and really do melt in a delightful way, and these are what I used in this recipe and in the images in this post.

Rinse tofu block and dry thoroughly. Place tofu in a medium size bowl, and mash with a fork until the desired piece size is created.
Add turmeric through salt & pepper to the bowl with the tofu and mix until blended and tofu is evenly coated.
Transfer the mixed ingredients to a small pan with a drizzle olive oil and heat on medium-high heat for about 5 minutes, or until the color becomes a solid yellow and it’s heated through, stirring occasionally.
While the tofu scramble is cooking, place the Gardein Breakfast Saus'age Patties in another small pan with a small amount of oil or cooking spray and cook for 8-10 minutes. Flip patties frequently while cooking. Cook thoroughly to internal temperature of 165°F (minimum). Remember: do not overcook – it's not meat!
OR, for a faster option, cook two patties on a microwave safe plate for 1:30-2:00 minutes, turning halfway through cooking.
Cut rolls in half, layer on cooked tofu scramble, non-dairy cheese and Gardein Breakfast Saus'age Patty. Serve immediately and enjoy!
